Ingredients:
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 carrot, julienned
- 1 onion, sliced
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp sesame oil
- 1 tbsp mirin
- 1 tbsp sake
- 1 garlic clove, minced
- 1 tsp fresh ginger, grated
- 1 tbsp sesame seeds (optional)
Instructions:
- In a large pan or wok, heat sesame oil over medium-high heat.
- Add the garlic and ginger and sauté for 1-2 minutes.
- Add the onion and bell pepper and cook for 3-4 minutes until softened.
- Stir in the carrot, zucchini, and broccoli, and cook for another 5-7 minutes until tender but still vibrant.
- Add soy sauce and rice vinegar, and stir to combine.
- Top with sesame seeds and serve with rice or noodles.
