Veggie Stir-Fry
Japanese Vegetarian

Ingredients:

  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 1 onion, sliced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame oil
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame seeds (optional)

Instructions:

  • In a large pan or wok, heat sesame oil over medium-high heat.
  • Add the garlic and ginger and sauté for 1-2 minutes.
  • Add the onion and bell pepper and cook for 3-4 minutes until softened.
  • Stir in the carrot, zucchini, and broccoli, and cook for another 5-7 minutes until tender but still vibrant.
  • Add soy sauce and rice vinegar, and stir to combine.
  • Top with sesame seeds and serve with rice or noodles.
