Ingredients:
- Fusilli pasta – 300g
- Fresh tomatoes – 2 large, chopped
- Fresh basil leaves – A handful, torn
- Mozzarella – 150g, torn into pieces
- Olive oil – 2 tbsp
- Salt – To taste
- Black pepper – To taste
- Balsamic vinegar (optional) – 1 tsp
Instructions:
- Cook the Pasta: Boil fusilli in salted water according to the package instructions. Drain, saving some pasta water.
- Make the Sauce: In a large bowl, combine chopped tomatoes, basil, and mozzarella. Drizzle with olive oil, and season with salt and pepper.
- Combine: Toss the cooked pasta with the tomato mixture. Add a little pasta water if the sauce is too dry.
- Serve: Drizzle with balsamic vinegar (optional) and serve immediately.
