Fusilli alla Caprese/ Fusilli with Tomato and Basil
Italian Vegetarian
Ingredients:
  • Fusilli pasta – 300g
  • Fresh tomatoes – 2 large, chopped
  • Fresh basil leaves – A handful, torn
  • Mozzarella – 150g, torn into pieces
  • Olive oil – 2 tbsp
  • Salt – To taste
  • Black pepper – To taste
  • Balsamic vinegar (optional) – 1 tsp

Instructions:

  1. Cook the Pasta: Boil fusilli in salted water according to the package instructions. Drain, saving some pasta water.
  2. Make the Sauce: In a large bowl, combine chopped tomatoes, basil, and mozzarella. Drizzle with olive oil, and season with salt and pepper.
  3. Combine: Toss the cooked pasta with the tomato mixture. Add a little pasta water if the sauce is too dry.
  4. Serve: Drizzle with balsamic vinegar (optional) and serve immediately.
